These homemade tater tot alternatives are a fun, delicious, and healthy alternative to regular tater tots. They make a great snack food or side dish for a get-together! You will need a vegetable grater to make these tasty tots.
Ingredients
- 1 ½ cups shredded zucchini
- 1 cup panko bread crumbs
- ½ cup shredded parmesan cheese
- 1 egg
- garlic salt
Directions
Shred zucchini with your vegetable grater. Pat and squeeze the shredded zucchini with paper towels to dry. I always sprinkle some garlic salt on them and let them sit for about 10 minutes to soak up moisture while I get the rest of my ingredients together. Get them as dry as possible with paper towels.
Preheat your oven to 400 degrees.
Add your 1 ½ cups shredded zucchini to a large mixing bowl, along with the bread crumbs, parmesan cheese, and your egg.
Take one tablespoon of your zucchini mixture and squeeze in your hand into the cylindrical shape of a tot. Place onto your greased baking sheet. Repeat until all your tots are shaped.
Place in the oven and bake for 20 minutes until the bottoms of the tots are crispy. Flip all the zucchini tots and bake for another 5 minutes and remove from the oven.
Once cooked, plate your tots!
Serve with dipping sauces of your choice, but I suggest marinara! Enjoy!
