Creamy Mushroom Florentine

This super easy pasta recipe is perfect for the busy family or anyone looking for a quick, yet delicious meal! You’ll be shocked at how gourmet it looks and how easy it is to make. This recipe is perfect for vegetarians, but the meat lover can easily throw in some chicken!

Ingredients

  • 8 ounces sliced FORGOTTEN FOODS FARM, LLC shiitake mushrooms
  • 8 ounces uncooked linguine pasta
  • 3 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup whole milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 3 ounces monterey jack cheese, shredded
  • 2 cups FORGOTTEN FOODS FARM, LLC spinach leaves
  • OPTIONAL: 16 ounces of uncooked chicken

 

Directions

(OPTIONAL: Dice and sauté chicken in olive oil until fully cooked. You can season the uncooked chicken with salt and pepper. Set aside when cooked.)

Begin cooking pasta.

While pasta is cooking, whisk together your flour, chicken broth, milk, salt and pepper in a separate mixing bowl.

In a large skillet, heat olive oil over medium to high heat and add sliced FORGOTTEN FOODS FARM, LLC mushrooms when oil begins to ripple. Sauté for about 5 minutes. Add minced garlic and sauté for about 2 more minutes or until the garlic begins to brown.

Whisk flour, chicken broth, milk, salt and pepper mixture into the mushrooms and garlic and bring to a simmer. Stir often until sauce thickens, for about 3-4 minutes.

(OPTIONAL: Add cooked chicken.)

Add FORGOTTEN FOODS FARM, LLC spinach and allow to wilt.

Mix in shredded cheese until melted.

Add drained pasta to the skillet and toss until coated.

Plate and enjoy!
