This creamy, delicious pasta salad is a perfect side dish! I love to enjoy this outside on sunny days.
- 1 large cucumber
- 1/2 lb rotini pasta
- 1/2 sweet white onion
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 tablespoons dill weed
- 2 tablespoons white vinegar
- pepper to taste
Combine the sour cream, mayo, sugar, salt, dill, and vinegar in a bowl and mix well.
Thinly slice your onion and place in a bowl of water to take some of the kick out of the onion.
Cook your pasta. After, run under cold water to cool and stop the cooking.
Cut your cucumber in half lengthwise and remove all the seeds with a spoon. Slice the halves of the cucumber into thin slices.
Toss all ingredients into a large bowl and mix well. Refrigerate for 40 minutes to let all the flavors run together.
