This easy, low-carb meal is not only healthy, but very delicious! This flavorful dish will leave anyone feeling satisfied!
- 4 medium sized zucchinis
- 1 lb. ground chicken
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 2 garlic cloves, minced
- 1 cup tomato or pasta sauce
- 1/4 cup parmesan cheese
- 1/2 cup shredded mozzarella
Preheat your oven to 400 degrees.
Chop zucchinis in half, lengthwise. Scoop the seeds and center out of each zucchini half. Place each zucchini half in a 9×13 baking dish greased with cooking spray.
Begin cooking ground chicken in a skillet over medium-high heat. While breaking apart the chicken, add the salt and pepper. Cook for 8-10 minutes, or until chicken is cooked through.
Reduce the heat to low and add the garlic to the chicken. Cook for another minute, stirring often.
Add the pasta sauce or tomato sauce and cook for another 3 minutes, stirring occasionally.
Once cooked, spoon the chicken mixture evenly into each zucchini boat.
Sprinkle the parmesan cheese and mozzarella evenly onto each zucchini.
Cover the dish with foil and place in the oven to bake for 35 minutes.
Once done, remove from the oven, plate, and enjoy!
